Fried Dace with Salted Black Bean Stir Fried with Indian Lettuce 豆豉鯪魚炒油麥菜

A classic Cantonese Chinese dish is the Fried Dace with Salted Black Bean Stir Fried with Indian Lettuce, or 豆豉鯪魚炒油麥菜.  Even our jolly wet market vegetable guy had to admit, chuckling, that there's no way around it: if you're going to cook Indian Lettuce, or 油麥菜, there's nothing better to go with it than the fabulous Fried Dace with Salted Black Bean, or 豆豉鯪魚.  

It's soooo easy to make this delicious dish cause you just open up a can of Fried Dace and stir fry it with the lettuce and Voila!  Classic, yummy, delicious Cantonese Chinese fish and vegetable dish!

Get a can of the iconic Fried Dace with Salted Black Bean.  Be sure to get the original version by Pearl River Bridge!  (See our post on canned Fried Dace with Salted Black Bean to find out more about it!)  You can find Pearl River Bridge Fried Dace with Salted Black Bean in most Chinese supermarkets, it's pretty ubiquitous. Just check to get the right one, i.e. check the brand logo and make sure you get the one with black beans.

This Indian lettuce, or 油麥菜, is available at the Hong Kong wet markets.  The HK supermarkets, unsurprisingly, don't usually carry this vegetable (and about ten thousand other kinds of vegetables!)  I find it very confusing how the so called "super store" supermarkets in Hong Kong seem to only carry a few things and randomly at that.  But that's okay, I prefer shopping at the wet markets anyways.  

My 媽媽 tells me that they have a great vegetable selection in Los Angeles at the various and many asian supermarkets.  Go figure...my 媽媽 has an easier time shopping for asian groceries than I do here in HK!

Fried Dace Salted Black Bean Stir Fried with Indian Lettuce Recipe 豆豉鯪魚炒油麥菜
(Prep time: 2 mins  Cook time: 2 mins)

Ingredients:

  • 1 can Fried Dace with Salted Black Bean
  • 2 bunches Indian Lettuce
  • 2 tbsp peanut oil
  • 3 garlic clove, smashed

Directions:

Wash the lettuce thoroughly and chop in half.  Further divide stem half lengthwise into bite sized portion.  Open Fried Dace with Salted Black Beans by slowly pulling the tab.

Heat the wok and when hot, pour in oil.  Add garlic and stir til fragrant.  Add the lettuce and stir for 1 minutes or til slightly limp.  Add the Fried Dace (including the sauce/oil) and mix with lettuce.  Lower heat, cover for 30 secs (or until the fried dace is warmed through.)  Turn off heat and serve hot.  So easy, so good!

  2. Hi R - Nope, never tried making with sardines or anchovies. The oil and salty black beans from canned fried dace create the sauce for this dish. So if making with other fish need to add seasonings for a sauce. Could be interesting. ~ellen

  3. If I can't find this lettuce what's a good substitution? Just regular leaf lettuce, something crunchier like napa cabbage or broccolini?

  4. Hey M1hofman - Any sort of similar lettuce should be okay. Using napa cabbage and broccolini would result in a different dish, though I'm sure it would still be tasty.
