I challenge you to try to say this teaser more than one time in a row.  We couldn't get through more than one reading of this tongue curler before we burst out laughing at the garbled nonsense coming out of our mouths!  Like everyone I've known this rhyme forever but only recently did it occur to me to wonder what exactly pickled peppers are.  And why the heck chili peppers needed to be pickled.  I actually didn't think I'd ever had pickled peppers at all, but it turns out I was wrong.  I love the jalapenos used in Mexican food and they are a pickled pepper!  I decided to make a batch of Chinese Pickled Peppers 泡辣椒, also known as 腌制辣椒,  to see what all the fuss was about and discovered, to the delight of my 老公, that pickled peppers are so much MORE!

This lovely pasta dish is actually a happy mistake...no, not a mistake, more like a happy meander that occurred when we were trying to recreate another Japanese dish known as mentaiko pasta (which is super nom nom!)  The problem with recreating that particular dish is that we couldn't find the main ingredient for it, Japanese cured cod roe.  So we played around and came up with something just as good (we think!Our Umeboshi Roe Pasta is a simple to make creamy yet light pasta with a delicately tangy sauce dotted with umami bursts of roe that is so delicious and totally addictive.  Umeboshi really rock the flavor!

Yay, it's almost time for Mid Autumn Festival 中秋節...my favorite Chinese festival!  I love the fact that it's a night festival (I'm an owl for sure) and the extravagance of Chinese lanterns floating like glowing gems thru the velvet night, illuminating the happy faces of children up well past their bedtime.  And...glory!...the sight of the Moon Goddess Chang'e 嫦娥 floating high in the sky in all her silvery glory is not to be missed.  

And besides all that I love making and baking and eating mooncakes, those wonderful moon shaped cakes stuffed with all manner of decadently delicious fillings.  (See the list of our other yummilicious mooncake recipes at the end of this post!)  And out of all those decadent mooncakes I think these particular mooncakes might be my favs.  Maybe cuz I dig the fragrant nuttiness of roasted black sesame.  Maybe cuz I lust after walnuts. I don't know...maybe I'm just nutty.  I just know that I love eating these deliciously satisfying Black Sesame Walnut Mooncakes 黑芝麻核桃月餅, with it's tender golden crust wrapped around an oh so fragrant sesame filling dotted through with delicious bitter sweet bits of walnut.  I can eat a whole plate of these in one go!  That's right...the whole plate means all five of the mooncakes on the plate you're looking at...gulp, gulp...gone already!  Hee hee...

Nowadays you can get sashimi and sushi just about everywhere as folk all over have fallen in love with the deliciousness of the fresh raw fish that Japanese cuisine has introduced to the world.  Twenty years ago I'll bet most of these people could never have imagined themselves eating and loving raw fish!

One of the unexpected benefits for seafood lovers such as ourselves is the fact that supermarkets that produce sashimi and sushi for sale are left with very very fresh fish heads.  And they put these out for sale at very reasonable prices!  Whoppee yeah!  Well as least for fish head lovers.  For those of us in the know, fish head is deliriously delicious, amirite?  Fat and fatty meat and cheek meat (yum!) and soft cartilage, crispy skin...  Oh yeah...seriously yummy.  The only thing I draw the line at is the eyes (which some folk adore.)  No fish eyes for me, well, at least no more fish eyes, not after my 媽媽 tricked a dumb 7 year old me into eating fish eyes cuz "it would make me smarter."  Or was it "make my eyes prettier"?  Ummm...note to 媽媽...didn't work on both counts...

But I digress.  Back to super fresh off the hook fish heads.  Available at my nearby supermarket!  What to do with such a treat?  Fish head's usually done up in a curry, like in Singapore and Malaysia.  Or perhaps in a braise.  However, being lazy fish lover types, here my 老公's Salt Baked Fish Head 鹽焗魚頭, the sublimely perfect, wonderously yummilicious and truly the easiest way to cook a fish head!

While doing research for our Soy Sauce Marinated Crab 醬油醃蟹 post I got pleasantly sidetracked on to the very interesting subject of the mud crab 青蟹 (which is the type of crab we decided to use for our soy sauce marinated crab.)  The more I looked into the information on the mud crab the more various names for the crab kept popping up.  Lots and lots of names...it was crazy.  What was going on?  How many names could one crab possibly have?  

Well, it turns out that this humble looking green shelled mud crab 青蟹 has specific Chinese names for many stages of its life, each stage offering a different yet equally yummilicious taste and textural experience.  It's so amazing the different offerings this little crab has to offer to the seafood lover!

This humble Chinese comfort egg dish (EGG PIE!) is a cheat.  Actually all Chinese egg dishes are cheats: simple ingredients that are usually on hand anyways, easy peasy and fast to make and most importantly super duper yummy to eat!  For a Chinese style dinner where there are always at least 3 dishes served, an egg dish is a most excellent and efficient choice to include on the menu.

And thus, ta-da!  Our latest easy egg dish the Chinese Preserved Radish Omelette 菜脯煎蛋 is a traditional home cooking favorite, so good and so easy to make this egg pie!

This is one of the classic Chinese pastry cake fillings, the Green Mung Bean Paste 綠豆沙餡, a light, creamy, beany and nutty sweet golden filling that is one of my favorite fillings.  We used this paste to make our yummilicious Green Mung Bean Cakes 綠豆糕 for Duanwu Dragon Boat Festival  端午節 this year but actually it is more often used in as a tender filling for various Chinese cakes, pastries, cookies and even mooncakes.

It's almost time for Duanwu Dragon Boat Festival 端午節 when the mighty dragon boats are once again afloat on the harbors to race each other to the booming beat of drums!  Did you know besides the making and eating of yummilicious zong zi to celebrate this festival (usually either the savory meat filled zong zi 肉粽子 or the sweet red bean paste zong zi 紅豆沙粽子the origins of the Duanwu Festival also has to do with a traditional time of ritual protection against pestilence and poisonous animals brought on by the heat of the summer season?  One of the things done in order to protect against summer sickness was to consume 'cooling' foods to help the body dispel heat and eliminate toxins.  Happily one of the traditional 'cooling' foods made for this purpose is the delighfully light and sweet Green Mung Bean Cake 綠豆糕, an elegant mold shaped sweet pastry of fragrant mung bean paste stuffed with sweet red bean paste.  So beautiful to look at and tasty to boot...you won't believe how fast these little cakes disappear!

This marinated crab dish is SO AMAZING!  Crazy amazing!  Super duper seafood delight-O with stars bursting in the sky amazing!  I've been wanting to make it this for ever so long ever since I heard my mother 媽媽 reminisce how her mother made this dish frequently for the family when she was a child growing up in Zhejiang 浙江.  They made their marinated crab quite simply by soaking in rice wine and I remember thinking...interesting...how would that even work?  Well, that crabby thought floated around in my head for a long time until I recently watched the Netflix food show 'Flavorful Origins' and had my mind totally blown away by...well, everything that food show had to say really.  If you love Chinese food, you've got to check that show out...I think I watched it 3 times in a row.  Anyways, back to crabs, this Soy Sauce Marinated Crab is inspired by the 'Marinated Crab' episode of (drooling!) and the result is crab meat and roe completely transformed into something succulent, meltingly tender and mindblowingly TASTY!

Yum, yum, yummy!  This yummilicious bowl of noodles of worldwide fame, the Taiwan Braised Beef Noodles 台灣紅燒牛肉麵, is filled with comforting chunks of meltingly tender beef and tendon and just cooked noodles all nestled in a deliciously aromatic spiced beef soup.  This noodle dish first appeared in Taiwan not too long ago, sometime after WWII when the Kuomintang 國民黨 relocated to Taiwan, bringing with them many of their own regional Chinese food influences.  Since then this delicious beef noodle has become a firm classic of Chinese cuisine.  So delicious and addictive and best of all easy to make right at home!

This is my favorite Chinese cold noodle dish!  At first glance this noodle dish seems unbelievably simple, just fried spring onions topping noodles mixed with soy flavored sauce.  But when made right it's also unbelievably yummilicious!  So much so that I always, always order this noodle when we go to Shanghai restaurants.  The sucky thing is that these days this noodle dish is badly made in the many restaurants and comes out tasting meh.  Which it shouldn't, cuz made right this Shanghai Spring Onion Scallion Noodles 葱油拌面 is absolute noodle perfection, the flavor of the fried onions intense, caramelized and delightfully chewy crispy and the al dente noodles just coated with heavenly flavor combo of sweetened soy and spring onion infused oil. 

So what is a girl to do if she can't get her noodle fix at the restaurants?  That's right, we make it at home now, just the way we like it!  It's actually a pretty easy to  make dish once you get the hang of it.

If you love eggs you'll love this egg dish!  My grandma 奶奶 used to make this special treat for us sometimes when she had a moment to spare.  It was such fun to eat these little egg wrapped meat pockets...I would always use my hands to eat it when grandma wasn't looking!  There's something so satisfying about the tender light texture of the egg wrapped around all that tasty meaty goodness...it's comfort food at its best.  This traditional Chinese Egg Omelet with Minced Pork & Preserved Radish 煎蛋角 is a simple pork filled egg omelet flavored with the unique sweet salty umami of Chinese fermented radish.

Here's a treat straight from the past of Hong Kong!  These simple to make and yummilicious snacks were sold from street vendors to children in the 50s and 60s of Hong Kong.  The conveniently sandwiched stick allows children to eat their snacks and run around at the same time.  A type of Hong Kong  lollipop, if you will.  Both savory and sweet, these Maltose Crackers 麥芽糖夾餅 are unique snacks from Hong Kong's past!  Plus they're so easy to make that kids can do it themselves, with some supervision during the maltose part...you don't want to come back and find them ensnarled in a sugary web!

If you're one of those folks like me who think that restaurant servings of skewers are waaaay too small and few and never enough for your deep skewer hunger then you're in luck cuz skewers are actually pretty easy to make.  And if you make your own you can have as many, many mouth wateringly lusicous skewers as you can gobble down and hide under your shirt for nibbles later.  (Ouch, watch out for the sharp tips!)  These Thai Satay Skewers of thoroughly marinated meat grilled to caramelized charred perfection are a showcase for those famously startlingly contrasts that work so well in Thai cuisine, the sweet, salty, sour, bitter and spicy present and somehow all perfectly balanced in one dish.

For all of you pizza and seafood lovers, I'm super excited to share this!  I've been binging on food shows again (my favorite lazing about thing to do), this time enjoying 'Ugly Delicious' and they had this segment about this little ol' pizza joint in New Haven called Frank Pepe where they serve white clam pizza.  OMGosh...Clam pizza!  And it's sooo delicious that it's famous! 

To be totally honest I was really surprised to see that Americans were loving themselves something so wildly seafood-y, if you know what I mean.  Hmmm..actually, I'm not even sure what that means.  Anyways, I was so intrigued with the idea, I mean fresh clams, pizza, what could go wrong?   

We love, love, love fresh seafood and make homemade pizza every week so of course we had to try it.  And it was AMAZING!  This White Clam Pizza is simply made: freshly shucked clams, a bit of garlic and cheese and a swirl of olive oil combine to make this pizza a marvel of crispy golden cheese infused with the absolutely delicious briny sea sweetness of clam juice.  This white clam pizza is to die for!

Here's a yummilicious and easy to make bowl of Chinese noodles that is an all-in-one kind of dinner.  I love making these noodles for dinner when I'm feeling a wee bit lazy or just plain ol' out of time.  This Zha Jiang Mian Fried Sauce Noodles 炸醬麪 is a classic Northern Chinese noodle dish that is topped with freshly slivered vegetables and minced pork sauce fried with soybean and tianmianjiang paste until fragrant.  It's a comfort dish that will make you feel all warm and fuzzy inside.  For such a simple to make dish, the rewards are super tasty and satisfying!

Here's something fun and easy to make for a snack as well as being a classic menu selection at all Hong Kong style cafes, also known as cha chaan tengs 茶餐廳.  One of my personal favorite late afternoon snacks at the local cha chaan teng is one order of the Corned Beef Egg Sandwich 蛋牛治 along with a tall cool glass of Hong Kong Style Iced Lemon Tea 凍檸茶.  Ah...nothing better to satisfy those late in the day stomach rumbles!   It's also super easy to make at home and I like it to do that so I can make my Corned Beef Egg Sandwich 蛋牛治 exactly the way that I like it best: soft bread enveloping tender flavorful beef and just scrambled lusciously soft and buttery eggs.  Yumm...

As promised, here is my sweet version of that festive Chinese New Year treat, the Cow Ear Cookie. In our last post we discussed the recipe for the traditional Chinese Cow Ear Cookie 牛耳朵餅,  a savory cookie flavored with the exotic flavors of the Chinese red fermented bean curd.  I found the flavors of the red fermented bean curd in a cookie so intriguing that I decided to try to make a sweet version of the same.  Here is the result, my version of a Sweet Cow Ear Cookie 甜牛耳朵餅, a buttery sweet pinwheel cookie swirled through with the distinct umami flavors of the Chinese red fermented bean curd.  Psst...tell you a secret...I think we like these sweet cookies even better than the traditional savory ones!!

This traditional Chinese New Year cookie that has a really good name.  An animal part name...a name that only the Chinese could think of, loving as they so do to name things in a strange ways.  Personally I could think of many other names for a cookie like this that would be as appropriate and definitely more pleasing to the ear (and the stomach!)  Nevertheless the aptly named but strange sounding Cow Ear Cookie 牛耳朵 is a pleasingly pinwheel patterned deliciously savory cookie flavored and colored with the interesting and rather exotic flavor of the Chinese red fermented bean curd 紅腐乳.

Traditional Chinese sweets typically use a couple of kinds of fillings like red bean paste (see my Grandma's red bean paste recipe), lotus seed paste, egg custard (see our custard recipe inside our Snow Skin Custard Mooncake recipe post), etc.  Another traditional Chinese dessert filling paste is this yummilicious concoction made from Chinese dates also known as jujubes 棗, a sweet pulpy fruit that is often used to sweeten Chinese desserts.  The Chinese Date Paste 棗泥餡 is pretty simple to make and the end result is a rich, fruity, sweetly smooth and thick paste that can be used for stuffing pastries like Chinese Rice Flour Cookies 紅棗泥炒米餅 or for making candy like Chinese Date Walnut Candy 棗泥核桃糕.

On a brighter note the pomegranate is the perfect fruit to celebrate the upcoming Chinese Lunar New Year festivities, its color the lucky happy red that the Chinese consider a harbinger of luck and its many seeds an apt symbol for fertility.  And while I actually really love eating pomegranate seeds, they're super yummy...but gosh darn it, I always found that getting the seeds out to be a real b*tch.  Picking them out takes forever...  But then I discovered that there is a really easy and quick way to get those pomegranate seeds out after all.  A fabulous fun method where you get to beat something up!

Yumm...broccoli and shrimp...two of my favorite things in one easy dish!  Make this way easier than you think Homemade Shrimp Ball Paste Steamed with Broccoli for dinner and not only does it look good but it's a two for one (seafood and veggies) as well as super yummilicious.  The key to this spectacular looking dish is the shrimp paste, or shrimp ball paste as I have called it to differentiate it from the intensely aromatic fermented shrimp paste 蝦醬.  This shrimp ball paste is made with fresh shrimps and it's surprisingly easy to make.  Once you have the hang of making shrimp ball paste you can make plain ol' shrimp balls for your noodle dishes or hotpots, or smear it on all kinds of veggies to be steamed or fried to shrimpy deliciousness!
