Flat Croissants Dipped in Chocolate

Have y'all heard of these lovelies?  Flat croissants, that's right, completely flattened croissants are all the rage right now!  These flat croissants began in South Korea, then got picked up by some TikToker's and the rest is history.  They are now everywhere, at least in HK.  

Why flatten a croisssant, for gosh's sake, you may be asking.  Indeed, at first, that is what I thought.  Why the heck would anyone want to flatten the darn things after making so much effort to puff it out with layers upon layers.  But after I finally tasted one of these flat croissants I changed my mind!  The many, many layers of the original croissant, when flattened, create a crispy kinda of cookie now wrapped inside a caramelized exterior.  And to top it off many of these flat croissants are further dipped in a flavored coatings, yum!

We decided to recreate these flat croissants in time for my little girl's annual school picnic.  There was a bit of struggle at first but once we got the hang of it the going was pretty easy.  Check out our guide on making flat croissants with all our tips and tricks to make the going smooth and easy as peasy.  Result?  Only totally yummilicious caramel coated crispy on the inside amazingly flat croissants dipped in luscious chocolate and sprinkled with your favorite sprinkles!  Nom, nom...

Choosing a Healthy Cooking Oil

Everyone wants to eat healthy, amirite?  We are what we eat and all that jazz.  Except it's not jazz at all but very really truly true.  But sometimes, no, wait, almost all the time, it's really hard to figure out what's going on.  One day you read that this type of food is really good for you.  Then, the next week, you read that that same food is really bad for you.  And...repeat...   What the heck's going on, supposed scientific world?!  

What that means for us of the non scientific world is that it's super hard to know what the heck is really good for you.  

One thing we've thought about quite a bit is the oil or fat that is used to cook our food.  Because if you think about it, some kind of fat or oil is used to cook all of our food.  So oil/fat is the common link across all kinds of diets, food cultures, food practices, etc.  It's in everything.  You can't cook or bake without it.  So we think that it's really really important that the cooking fat or oil that we use is a healthy one.

White Chocolate Lemongrass Cookie

Recently we've been dipping our toes into the wonderful flavors of Vietnamese cuisine (see our posts on Vietnamese Beef Vermicelli Noodles and Vietnamese Deep Fried Spring Rolls...yum!)  and so quite naturally have been using a lot of lemongrass.  You have seen it before of course, that green yellow stalk that looks for all the world like the dried twig of a tree.  This humble looking woody stick has flavor magic inside it though, giving the cuisines of Vietnam and Thailand some really awesome and unique flavors.  

Well we had a wee bit o' lemongrass left over and one day, while poking around an old chocolate cookbook, what did I discover but a recipe that uses lemongrass and white chocolate together in one cookie!  Strange combination but it caught my imagination.  So we tried it.  

And what do you know, these White Chocolate Lemongrass Cookies were really quite good, the sweet mellow creaminess of white chocolate and aromatic butter complemented by the exotic citrus ginger notes of lemongrass. A definite must bake for any fan of lemongrass!
