An absolutely unexpected and most delightful discovery! It all kinda happened as a offshoot of us making the most delightfully creamy chia seed milk puddings. If you're familiar with chia seeds, you will already know that these little fiber packed seeds must be soaked in a liquid, wherein they expand, soaking in tons of the liquid and exuding a gel that mixes with the liquid to form a wonderful pudding like texture. So creamy and delicious but we wanted to find an alternative to using dairy. And thus we discovered homemade almond milk...an amazing alternative to dairy milk!

Pistachio Almond Biscotti
Tis the season...for cookies! One of my absolute favorites is this elegant Italian Pistachio Almond Biscotti cookie studded with nuggets of almonds and pistachio making for a subtly sweet, nutty, and oh so satisfying flavor. The Italian word 'biscotti' means 'twice cooked', a baking method that creates dense, crunchy textured cookies that are perfect for slow yummy nibbling or for dunking into a hot coffee. These biscotti are not only super yummilicious but also gorgeous to look at with their flecks of pistachio green. Just the thing to add to a cookie box!

Almond Nougat Candy
Okay, I seriously like nougat a lot...a very a lot. It's so festive! And yummy. Every once in a while I will splurge on prettily wrapped bags of nougats to nibble on, bags that empty way too quickly into the tummy of the nearest nougat addict. (Umm...that would probably be me.)
The problem I found was that I always wanted to eat a LOT of nougat, darnit that honey scented soft fluffy whiteness interspersed with the nutty crunch of roasted nuts makes it just simply irresistible and addictive. So I figured if I wanted to eat a LOT of nougie maybe I should try to make some at home and pig out standing in the comfort of my own kitchen.
But then I got discouraged cuz there was a lot of stuff in nougat making like sugar 'crack' stage and glucose syrup and so on and I thought, meh...this is too hard. (I've been struggling with sugar work...more on that later.)
But then...then I found a classic nougat recipe that was really simple and straightforward to make, only three ingredients! and a bit of time. With this traditional recipe I made my own Almond Nougat Candy (just in time for wrapping up as gorgeous homemade Christmas gifts! After I nosh my way through the first batch, that is...) and what can I say, it's soooo yummilicious! Gosh darn it, this freshly made nougat, just soft enough to be deliciously chewy, really beats the socks off anything you can buy in the stores!

Macau Almond Cookie 澳門杏仁餅
Chinese Mid Autumn Festival 中秋節 is just around the corner and my little girl is beside herself with anticipation! (It's her favorite holiday of the year plus she gets to stay up late!)
The yearly celebration of the biggest moon of the year, the harvest moon, Mid Autumn Festival so much fun here in Hong Kong! There are moon cakes to make, shopping expeditions to make, lanterns to light and little children to dress up in festive Chinese attire
, moon gazing outings to plan!
After an early preparation of our traditional double yolk lotus seed paste mooncakes and our five nut mooncakes, I thought why not make an extra traditional treat to have on hand in case of the extra munchies? I ended up making some of these delectably light and flavorsome Macau Almond Cookies 澳門杏仁餅, quite easy to make and delightfully easy on the eyes.

Chinese Almond Cookies 杏仁餅乾
I remember one of our family's special treats growing up was when 媽媽 and 爸爸 would come back from a long freeway drive to Phoenix Bakery in Chinatown with a pink box packed to the brim with deliciously fragrant crumbly yet crunchy Chinese almond cookies, each with a toasty almond in the middle.
These golden delights were eagerly snatched up by us three girls, each having our own style of devouring these almond scented treats. My special method was to nibble away all around until only the almond was left on its own island of cookie. Yummilicious!

Almond Bean Curd Dessert 杏仁豆腐
A beautiful to look at and easy to make Chinese dessert, gently scented with the flavor of almonds. It rather reminds me of elegant Chinese ladies from the 1920's, slim, pale and delicate in their silk cheongsams like flowers in a field.
