This delectable something!  Oh, I am pleased as punch that I finally figured out how to make this at home!  Yogurt, delectable thick, smooth and creamy yogurt, homemade without a machine.  Omgosh this makes me so happy!

Previously, I gotta admit, we were kinda so-so on yogurt.  Sometimes good, sometimes okay, sometimes too sweet or a wee bit too sour, fruit kinda goopy, etc.  That and the kinda pricey price point and we never really got into yogurt.  But one fine day I read that making yogurt at home was pretty straight forward and, as I had recently discovered a really great milk, we plunged into our great homemade yogurt experiment.

Today I'm going to show you how my dearest Grandma 奶奶 taught me to wrap a wonton.  On wonton making day my 奶奶 would always round up all us kids to help her.  First we would make homemade wonton wrappers.

The nifty pasta maker (I bought one recently and it's still unchanged after all this time!) would be clamped firmly to our dining table.  Us kids would fight for the chance to turn the crank on the pasta maker and watch the dough roll through again and again until at last it magically rolled out in thin shiny supple sheets.  Grams 奶奶 would then cut the dough sheets into squares with her big chopper knife and then she would have our extra (and small) hands to help wrap up plump snowy row after row of wontons.  It's easy once you done it once or twice.

There are other methods to wrap wonton but they all revolve around the most important rule of wonton wrapping: wrap it up snug and tight so that the wonton doesn't fall apart during boiling!  For myself, the wrapping I always use is the same one dearest grandma taught me all those years ago.

Chinese Winter Sun Dried Salted Fish 臘鯪魚

Dear readers...it's been a hard year, hasn't it?  Well there's a new year ahead of us and here's hoping (fingers very seriously crossed) that the coming year is better,  much better.  Aristotle Onassis said "It is during our darkest moments that we must focus to see the light."  Well said, sir.

As with everyone else all around the world, we've been staying mostly inside our homes for a while now.  I've noticed that limitations, at first seemingly restrictive, can in the end actually push you to exercise your mind in interesting and less used pathways.  Thus we present our slash of light in the darkness, an experiment born out of a bit of boredom (umm...still at home...) and a bit of necessity (umm...still must stay at home...)  

Out of this time of 'limitations' comes my 老公's very successful attempt at Chinese Winter Sun Dried Salted Fish 臘鯪魚: fresh fish, lightly salted, marinated and then hung dried in the winter sun, resulting in a preserved fish that tastes fresh but intensified, slightly salty yet still sea sweet with a chewy texture similar to very soft jerky.  

This whole procedure, done in our tiny kitchen and hung to dry in our common stairwell is a simple yet strong reaffirmation back to our roots as humans with just the sun to preserve our precious food.

Pomegranates are a gorgeous fruit, chock full of fabulousness for your mind and body, its red juicy seeds shimmering in the light like living ruby teardrops.  Famously, pomegranate seeds were the temptation that Persephone succumbed to when abducted by Hades, the Lord of the Underworld.  Those few ruby red seeds tied her to the world below forever...  (Lesson: when in a fairy or god/goddess situation, never ever eat or drink anything!!!)

On a brighter note the pomegranate is the perfect fruit to celebrate the upcoming Chinese Lunar New Year festivities, its color the lucky happy red that the Chinese consider a harbinger of luck and its many seeds an apt symbol for fertility.  

While I actually really love eating pomegranate seeds, they're super yummy...but gosh darn it, I always found that getting the seeds out to be a real b*tch.  Picking them out takes forever...  But then I discovered that there is a really easy and quick way to get those pomegranate seeds out after all.  A fabulous fun method where you get to beat something up!

I must confess a love for all foods preserved.  It must be the special uniquely umami taste that preserved foods have, the original taste intensified and transformed through the process of preservation and fermentation.  

I have been anxious to try this particular preservation for a while, having seen the lovely preserved golden hued mullet fish roes 烏魚子 (so expensive!) available at the airport duty free shops when we have airplane layovers in Taiwan or Korea.  Thus when we discovered fresh fish roe (squeak!) at our local wet market there was nothing left to do but try making our own Homemade Dried Salted Cured Fish Roe, or  自製魚子幹.

Chinese Preserved Limes 咸檸檬

A sore throat is no fun.  My little girl recently had a sore throat.  Just a sore throat, no runny nose or coughing.  But, thing is, it wouldn't go away.  My little girl doesn't get sick that often, thank goodness, but when she does she's as grumpy as a wee bear bumped out of hibernation.  

I tried some homeopathic meds on her, the kind that works wonders for our usual colds, but it didn't help that much.  Finally, in desperation, we decided to try a Chinese traditional folk remedy for sore throats, a brine preserved lime crushed in some water or, as it is often served in Hong Kong, in a tall cool glass of 7up soda.  

We bought a bottle of preserved limes at our local supermarket and tried it at home.  When I say this I'm not exaggerating but, seriously, my girl's sore throat was pretty much not only soothed right away but somehow chased right out of the house.  Wowzers!  I was converted on the spot!

Have you ever wondered how to get that homemade mooncake skin as thin and even as possible?  With machines it is very easy, obviously, but when hand pressing mooncakes at home it can be quite tricky.  If you're not careful you'll end up with some sides thick and some sides thin.  Uggh...not a pretty sight.  I know that there is a 'professional' hand method to make wrap mooncakes but my clumsy hands haven't really mastered it yet.  

However, as we really love making homemade, hand pressed mooncakes, we have developed a 'cheat', so to speak, our own unique easy method of wrapping the mooncake, whether for snow skin mooncakes or traditional baked mooncakes, that produces a a thin even skin on all sides of the mooncake.

Dear readers, this is the last day!  I have to admit it, this little gingerbread house took longer to do (and a caused a bit of nervous hair tearing) than I thought it would...but what can I say, it was worth it.

There's nothing quite like a house made completely of candy and cookies, not when I was a little girl reading over and over again the fairytale of Hansel and Gretel and the little candy house they found nestled in the woods, and not even now when I'm all grown up and seen, well, lots of strange and wonderful things.  

When my little girl and I finally finished our little gingerbread house and it was sitting so pretty on our table...it was just the feeling of magic...I felt almost as if we were transported to that fairy forest, looking through the trees, eyes big with wonder, peeking at a house delightfully  and completely made of candy, with a wicked wee witch hiding inside...

The Dragon Boats are preparing to slide speedily and fiercely through the calm summer waters and that means it's time for the yearly wrapping of the yummilicious zong zi!  In our last post we made Mini Crystal Red Bean Zong Zi 水晶紅豆粽子, a tapioca twist on the traditional zong zi, and here today we share our step by step guide of How to Wrap Mini Zong Zi Rice Dumplings  迷你粽子包法, half sized zong zis (around 3" long) that are perfect serving size for a tea time treat or a child sized eat.

How to Temper Chocolate

At the beginning, all I knew was that I loved chocolate.  Loved, loved, loved chocolate.  And when I got more interested in baking and all that jazz I naturally started wanting to do some chocolate stuff.  

First I decided to make some molded chocolates with my little girl.  Should be easy, right?  We melted some dark chocolate, poured it into molds and put it in the fridge to set.  The next day we popped them out, looking pretty and...they melted immediately to the touch.  Ugh...what were we doing wrong?

It turns out that to do most of the cool things one can do with chocolate, one must temper the chocolate.  Tempering melted chocolate allows one to coat with chocolate or mold chocolate that will end up to be shiny, smooth, break with a snap and able to stay at room temperature and be touched without melting right away.  I was determined to learn how to temper chocolate and here I share what I learned, how I screwed up, and the tips that really helped me.

Fresh Bamboo Shoots - How to Prepare 準備新鮮冬筍

I grew up thinking food only came from supermarkets and so am forever grateful that I have had the chance to discover and experience the wet markets of Hong Kong where anything and everything culinary can be found for your eating pleasure.  

There's nothing quite like the subtle thrill inside as you wander through the bustling real food markets on your daily round, keeping the corner of your eye on the lookout for whatever food treasures that day will bring.  

I was so excited with my latest discovery that we found in a humble dirt sprinkled box, these strange horn shaped plants? vegetables? that turned out to be Fresh Bamboo Shoots!  Woo-hoo!  I've always wanted to try fresh bamboo shoots!  It turns out that these fresh bamboo shoots are not only easy to prepare but much more delicious than the canned bamboo shoots that we usually use.  (But of course it is!)
