Winged Bean Garlic Stir Fry 蒜蓉炒翼豆

 Have you ever seen a bean with wings?  Or wings with a bean?  No?  Well then, I am very pleased to introduce you to the fabulous Winged Bean 翼豆!  We discovered these strange beans in the wet market the other day.  So funny looking with four little wing like corners on each bean. Never seen them before but the vegetable lady assured us that they were quite delicious.  

Excited as always to try a new veggie, we scooped up a bag full to take home.  True to the vegetable lady's advice a very simply prepared Winged Bean Stir Fry was delicious: kissed with fragrant garlic, these stir fried beans were tender yet still lightly crunch with a sweet light flavor reminiscent of green peas and snow peas.

Chili Leaves Stir Fry with Garlic 蒜蓉炒辣椒葉

One recent day while strolling through our local wet market we spotted a box of fresh tender looking green vegetables spotted throughout with the most beautiful tiny white flowers.  What the heck were these?  Never seen anything like these before.  

We found out that these lovely tender greens were the leaves of chili pepper plant.  What, we exclaimed, you can eat chili pepper leaves?!  The grumpy old vegetable vendor declared with a harumph and a sideways look that it was so.  Well, what to do but to buy a big old bunch of the fresh tender greens and take it home to do a simple and classic Chinese stir fry with garlic. 

It turns out that not only can you eat these tender leaves but Chili Leaves Stir Fry with Garlic 蒜蓉炒辣椒葉 is a simply yummilicious vegetable dish!

Chinese Black Bean Sauce 蒜蓉豆豉醬

Do you know what these rather plain looking beans are?  These humble little beans are the Chinese fermented black soybeans, known also as Douchi, or 豆豉.  These black beans are used for the making of that ubiquitous Chinese sauce that is used in all kinds of Chinese dishes, be it pork, beef, or seafood, the Chinese Black Bean Sauce, or 蒜蓉豆豉醬.  

As I was saying in our previous post about Chinese Steamed Fish with Black Bean Sauce, I didn't used to be a fan of this sauce, finding it rather overpowering and creating a 'sameness' in each dish in which it was used.  

Until, of course, the day that my 老公 decided to start making his own Chinese Black Bean Sauce, that is.  It turns out that homemade Chinese Black Bean Sauce is soooooo much better than canned or what you get in restaurants, a delightfully unique, multi-layered, intriguingly flavored sauce that will complement whatever dish you decide to pair it with!

Chinese Pickled Garlic 醃蒜頭

Ah, garlic!  That humble culinary bulb, the stinking rose!  People always say that garlic is one of those things where either you love it or you hate it.  For myself, I have found that my personal relationship with garlic fluctuates.  

Sometimes, in some forms, I love it!  And sometimes, in other forms, I can find myself avoiding it.  I can't imagine cooking without it and yet, when I was pregnant and for a long time after, I could not stand raw garlic.  And then I swing back, ruminating on the creamy flavor of garlic after a deep slow long roast...or the flavor layers one smashed bulb can add to a simple stir fry!  

One thing I have always found harder to like is raw uncooked garlic.  Recently we decided to try making Chinese Pickled Garlic, or 醃蒜頭, and I was really, really pleased to find that this sweet vinegary pickled garlic is not only immensely more yummilicious than raw garlic, but also packed with great health benefits and you also end up with the most amazingly garlicky flavored vinegar syrup in the world!

Chinese Steamed Eggplant 蒜蓉蒸茄子

The beautiful purple...the wondrous color of both poison and eggplants.  This chinese preparation of the humble eggplant is simple but really good, resulting in a flavorful, creamily tender vegetable dish that makes you go back for more and more.  And versatile too.  If you're not the garlic type or nervous of the chilis, just take em out, no problem and you will still have a fine lip-smackingly delicious dish.
