Chinese Fermented Rice Drunken Chicken 酒釀雞

This is a twist on the classic version of the famous deliciously chilled and wine flavored Chinese Drunken Chicken.  Y'all be knowing that wine has a most wonderful way of flavoring food.  In our previous recipe post on the traditional style of Chinese Drunken Chicken 酒釀雞 we remarked on the fact that different types and mixes of chinese wine can be used to produce tailored to your taste buds flavorsome results.  

For this chilled Chinese Fermented Rice Drunken Chicken 糟雞 a new element is added to the wine marination, a Chinese fermented rice, a sweetly fresh, winey concoction of fermented rice, and the results are a tender chicken deeply infused with winey flavor as well as hints of sweet ricey umami that is arguably even more delicious than the traditional drunken chicken.   Fans of the unique addictive taste of fermented rice will have to try this dish while those who haven't tried it yet, you're in for a treat!

Chinese Fermented Rice Poached Egg Soup 酒釀蛋

We made a big jar of Chinese Fermented Rice 甜酒釀 recently cuz my little girl loves the stuff and she's been bugging me to make some for her.  And it's the perfect thing to help boost our immunity for the oncoming winter weather.  

This wonderfully fresh, sweet and slighty winey fermented food is packed full of all kinds of probiotics, amino acids, vitamins and minerals that your body needs to thrive.  The probiotics in particular help to balance the bacteria in your gut which is a key player in helping to boost immunity.  

Now that we have a big ol' jar of this stuff, I've started making this homey but wonderfully satisfying breakfast treat, Chinese Fermented Rice Poached Egg Soup 酒釀蛋, a simple soup of sweet fermented rice mixed with hot water and topped with a poached egg.  Each spoonful carries the winey sweet taste of fermented rice and a swirl of bright creamy egg yolk.   This soup makes you feel warm and fuzzy and totally ready to take on a new day!

Homemade Chinese Fermented Rice 自製甜酒釀

One of the special traditional foods that my grandma knew how to make was Homemade Chinese Fermented Rice, also known as Jiu Niang or 甜酒釀, a fresh, sweet and slighty winey fermented rice with a porridge like texture.  She would make tons of the stuff and pass it out to all the family but no one liked to eat it as much as me.  I loooved the stuff and would eat it slowly, one delicious creamy spoonful at a time, from a huge jar in the fridge.

Now I know that my childhood fondness for Chinese fermented rice was probably due in a large part to my predilection for the tastes and flavors of alcoholic beverages as this fermented rice is slightly boozy.  (Ummm...mom, dad, what the hey?!)  But I digress from the topic at hand.  

The point here is that I still love this stuff and I finally got up the gumption to try to make Chinese Fermented Rice at home.  Guess what?  It was easy peasy and it is so d*mn good when freshly fermented!  I'm over the moon...I can have all the Jiu Niang I want forever!
