Crushed M&Ms Vanilla Ice Cream

One of the strangest things, I think, is how enjoyable ice cream is in the dead of winter.  How freezing your body inside and outside can bring joy and fulfillment is something that I cannot begin to figure out.  But I know it is true.  And not just myself either.  I see people greedily and happily eating ice cream in the cold of winter all the time.  

So, in celebration of ice creams in winter, we made an ice cream with one of our favorite winter flavors, vanilla, and some M&M's, a winter favorite because they remind us of Christmas and Chinese New Year with all their bright lovely sparkily colors.  So if you're a winter ice cream eater like us, try indulging yourself with our super delicious M&M's Vanilla Ice Cream!

Crushed M&Ms Vanilla Ice Cream Recipe
(Prep time: 2 mins  Cook time: 10 mins)

Ingredients:

Heat milk, sugar and salt in small pot until sugar is melted.  And 2 tsp of vanilla, stir and remove from heat.  Stir egg yolks in a bowl.  Add the warmed milk bit by bit, stirring constantly until all incorporated.  Pour back into the pot and cook over low heat, stirring constantly until the custard mixture coats the back of your spoon thickly.  Strain custard into cream, stirring until incorporated.  Add the remaining 1 tsp of vanilla extract and let cool.

Take half of your M&M's and break them into fourths.  (Or you could crush all of them too, it's up to you!) We used the end of our rolling pin (which is flat) and that worked very well.

When the mixture is cool, follow your ice cream machine instructions and make ice cream!  Be sure to add the M&M's when the ice cream is almost frozen but still able to be stirred.  

Or you can make ice cream without an ice cream machine like we do:  Cover and put cooled mixture in the freezer.  Wait approx 45 minutes or til the ice cream starts hardening at the edges.  Take out and stir thoroughly.  Cover and return to freezer.  Repeat these steps every 30 mins or so until the ice cream reaches the texture of very soft serve ice cream (at least a couple hours).  Gently stir in your M&M's, pour into whatever container you use to keep ice cream and let freeze overnight.

To serve your delicious homemade ice cream, take out of freezer 10 minutes before and let it soften until you are able to scoop from it.  Enjoy your delicious winter ice cream treat!
