Best Banana Bread 香蕉麵包

If you're anything like us you'll know what I mean when I say that you've got to keep the cookie jar supplied. I don't like to buy sweet treats from the stores, preferring to make them myself. But the family eats the sweet treats as fast as I can make them! And oftentimes when I'm busy doing this and that it always feels like I don't have enough time. That's why I love, love, love this banana bread recipe so much! It's really easy, quick and, best of all, this Best Banana Bread 香蕉麵包 comes out tender and moist and super duper yummilicious every time!
Really the only thing that's the least bit hard about this banana bread recipe is remembering 1) to buy banana and 2) remembering to bake the bread before your bananas get too black! Which is the only crucial technical part of making a really tasty banana bread, you gotta wait for the bananas to get all black and spotty all over. (We love ugly bananas!) At this point the banana don't make for perfect eating as a banana (unless you like soft mushy banana texture) but they sure are going to help you make the perfect banana loaf!
Tip: If you're going to keep the bananas until they're overripe enough for this recipe, don't hang them from a hook like we used to. We woke up one day to find our kitchen floor "banana bombed" all over the place!

As the bananas ripen, they get more and more sweet, and also more and more soft. They should be spotted a bit all over but not completely black. (I've been forgetful and discovered mummified black bananas before. Do not use these! It's too late, they''re dead!) This extra sugar and tender texture inside will give your bread a wonderfully moist, tender, caramelized banana-y OMPH! that will hit your sweet comfort spot in just the exact right place!
I like a banana bread that's really quite moist and tender, not super sweet, with a nicely caramelized crust. I can make this bread in 5 minutes flat and in it goes into the oven! Best Banana Bread Recipe 香蕉麵包
3 large bananas, ripe (or four small)
1/3 cup melted butter (75g)
3/4 cup sugar
1 tsp vanilla
1 1/2 cup flour
1 tsp baking soda
1/4 tsp salt
Preheat oven to 350 F (175 C).
Melt butter. Mash bananas (I use the end of my rolling rod) and mix the butter in. Mix in sugar, egg, and vanilla. In separate bowl, combine flour, baking soda and salt. Add dry mixture into wet and hand mix until just combined. Pour into a 4" x 8" loaf pan. Bake 1 hour. Let cool in pan before removing. Enjoy!
