Rosemary Focaccia Bread

I like making bread.  No, wait, I love making bread!  It's so meditative- the mixing, kneading, proofing and baking are just soothing to the soul.  And, of course, eating fresh fragrant home baked bread is such a rewarding experience; there's no better bread than fresh from the oven!

I wanted to share my new favorite bread recipe, Big Bubbly Focaccia, from that most fabulous of bread sites, King Arthur Baking.  I initially tried making this focacia because 1) we looove focaccia and 2) it was King Arthur's 2025 Recipe of the Year (which is a total thing!).  After making it the first time I was flabbergasted by the amazing and easy to achieve results.  This focaccia bread is absolutely fabulous- so airy, tall and light with a most tender and flavorful crumb and a wonderfully golden crispy crust.

We are so in love with this Rosemary Focaccia Bread and have been making it over and over ever since!

Homemade Ricotta Cheese

Have you ever heard of ricotta cheese?  Ricotta is a fresh soft Italian cheese with a creamy texture that is amazingly used in so many delicious sweet and savory dishes!  Simply top on to fruit with a drizzle of honey or smear on toast with a sprinkle sea salt/pepper.  For savory dishes use to make lasagna, stuff ravioli and to top pizza.  For sweet treats use to make lusciously light cheesecakes, pies, cakes and that extra special Italian dessert cannoli.  What a powerhouse of a cheese, amirite?!

Ricotta actually means 'recooked' in Italian, as it is traditionally made by 'recooking' the leftover whey from making rennet based cheeses like parmesan or provolone.  However, there are other simple ways to make this cheese.  For us, as a consequence of making homemade yogurt and failing sometimes, we discovered, to our delight, that ricotta cheese is very easily made at home with just a few simple, always on hand ingredients!  Wow, oh, wow!  What a discovery indeed, yummilicious ricotta cheese, with its mild, creamy, slightly sweet and nutty flavor, moist and soft texture, made fresh and easy peasy at home.  It was my first homemade cheese and it was perfect!

Pistachio Almond Biscotti

Tis the season...for cookies!  One of my absolute favorites is this elegant Italian Pistachio Almond Biscotti cookie studded with nuggets of almonds and pistachio making for a subtly sweet, nutty, and oh so satisfying flavor.  The Italian word 'biscotti' means 'twice cooked', a baking method that creates dense, crunchy textured cookies that are perfect for slow yummy nibbling or for dunking into a hot coffee.  These biscotti are not only super yummilicious but also gorgeous to look at with their flecks of pistachio green.  Just the thing to add to a cookie box!

Homemade Limoncello - Italian Lemon Liqueur

Do you find yourself ever going on food tangents?  You know, an idea pops into you head, a food idea mind you, and you’re off down the rabbit hole, chasing a new food adventure.  So much fun, amirite?!

Well, this time I got tangled up in an old food obsession of mine, lemons.  I LOVE lemons, they are so amazing!  The flavors and fragrance from the peel to the juice that they gift to us is just endless and wonderful.  I mean, have you ever had lemon curd?  To die for amirite?!  

Anyhoo, I discovered a traditional Italian liqueur called limoncello that can be simply made at home  with lemon peels, vodka and sugar syrup.  Of course I had to try it right away.  Straight down the rabbit hole I went.

At the end of this food adventure I have to honestly say I cannot believe how well it turned out.  It was gosh darn mind blowing.  Our homemade Limoncello liqueur was astounding: so fragrant, so lemony, so delicious, so beautiful!  Surely a gift of nectar from the gods of lemon ;)

Almond Nougat Candy

Okay, I seriously like nougat a lot...a very a lot.  It's so festive!  And yummy.  Every once in a while I will splurge on prettily wrapped bags of nougats to nibble on,  bags that empty way too quickly into the tummy of the nearest nougat addict.  (Umm...that would probably be me.)  

The problem I found was that I always wanted to eat a LOT of nougat, darnit that honey scented soft fluffy whiteness interspersed with the nutty crunch of roasted nuts makes it just simply irresistible and addictive.  So I figured if I wanted to eat a LOT of nougie maybe I should try to make some at home and pig out standing in the comfort of my own kitchen.  

But then I got discouraged cuz there was a lot of stuff in nougat making like sugar 'crack' stage and glucose syrup and so on and I thought, meh...this is too hard.  (I've been struggling with sugar work...more on that later.)  

But then...then I found a classic nougat recipe that was really simple and straightforward to make, only three ingredients! and a bit of time.  With this traditional recipe I made my own Almond Nougat Candy (just in time for wrapping up as gorgeous homemade Christmas gifts!  After I nosh my way through the first batch, that is...) and what can I say, it's soooo yummilicious!  Gosh darn it, this freshly made nougat, just soft enough to be deliciously chewy, really beats the socks off anything you can buy in the stores!

Chocolate Dipped Biscotti

My very first biscotti was eaten a long, long time ago in a little Italian style cafe near my university campus.  The counter had a beautiful and enormous glass jar packed with these funnily shaped biscuits.   Newly from suburbia I naturally had no idea what they were but I could see that many others in the cafe had indulged.  So I took the plunge and ordered one with my usual cuppa.  

As I picked up this thing called biscotti I thought to myself, you have got to be kidding, this thing is hard as heck!  I gnawed furtively at one hard end.  Humm...not going to happen.  I looked about and spied out others taking their hard as heck biscottis for dips into their coffee.  I followed suit and wow, wow...deep biscotti love!

Ever since then I have always, always wanted to make biscotti.  So I'm super excited to share this amazing biscotti recipe, it's so easy to make and OMG so yummilicious!  And comes out hard but not too hard!  You can eat it without dipping.  And of course, because I'm a chocolate freak, I had to up the ante and make it Chocolate Dipped Biscotti!
