Congee love!  More congee goodness!  We move onto the fabulous traditional Cantonese Fish Congee  魚粥 which is my favorite congee of all time!  Smooth creamy warm congee with just cooked, tender and delicious pieces of fish, what more could a gal ask for?

Basic Congee with Dried Scallop and Tofu Skin 腐竹瑤柱粥

There are tons of recipes for congee out there, and I can totally understand why.  Rice cooked into a soupy mess is delicious, filling and soothing to the soul.  But honestly a lot of the recipes labeled as congee are not really congee.  Rather, they are recipes for delicious rice porridge.  This is a recipe for traditional Cantonese style Chinese congee 粥, a different creature altogether from rice porridge.

Traditional congee or 粥 is thick and creamy and perfect for showing off the simple yet aromatic flavor of rice.   It is so popular a part of the Cantonese eating repertoire that there are dedicated restaurants that serve delicious congee all year round in HK.  Which is saying a lot considering the super high rents in this functional city.  

But it's actually pretty easy to make traditional congee at home.  The most basic congee you can make is with just rice, water and salt.  Today, however, we're kicking it up a notch or three by introducing the more sophisticated classic Basic Congee with Dried Scallop and Tofu Skin 腐竹瑤柱粥, a deliciously creamy congee, ever so delicately flavored with beancurd and scallop.

Artisanal Shrimp Paste 廣興隆蝦醬

As promised, our post on the amazing artisan shrimp paste that we discovered in Macau.  

We recently returned to Macau for a short trip.  It was our first time out of Hong Kong in 3 years!  We had missed Macau in the interim, its charming streets, gaudy casinos, the grand old buildings from another time... There was so much to rediscover!

But you know what we quickly realized that we had missed most of all?  That’s right, it was the food!!

So we ate and ate.  And got slightly chubby.  So much yummy food!  Food is life!  Even in the midst of this feast we had to stop by and pick up a jar of our favorite artisanal fermented shrimp paste: 廣興隆 Kong Hing Loong Shrimp Paste.  It’s simply the best shrimp paste we’ve ever had.

White Bean Paste Nerikiri Bunny

It's time for Easter and we're letting the bunnies out!  We recently discovered and have been exploring 'white bean paste', a mild sweet bean paste that turns out to be very versatile in the making of all kinds of desserts.  Check out our first dessert made with white bean paste, our Chocolate Raspberry Tang Yuan, so yummy!

We've pushed on exploring white bean paste and discovered the wonderful things that the Japanese have done with it.  Namely they have made white bean paste into an edible "clay" or "dough" that can then be modeled and shaped into all kinds of amazing little sweet treats called "nerikiri" or "nerikiri wagashi."

Our first try at making and shaping a "nerikiri" was to make this simple bunny in time for Easter celebration.  We were all delighted by the results.  Our White Bean Paste Nerikiri Bunny turned out super duper cute, with soft white fur and little pink ears, twinkly black eyes and a round fluffy tail.  Bunny's all ready for some Easter fun!

Spring Rolls 春捲

I love, love, love spring rolls!  There's just something about getting to bite through all that lovely golden crunchiness into a juicy and yummilicious meat and veg filling that is soooo divine.  Whenever we go to have dim sum I always have to get a plate or two of the spring rolls and indulge myself, oh yeah, it's spring roll heaven time baby!  

It's so hard to stop myself from being a pig and eating all the spring rolls...so, in the spirit of spring roll fever, I thought why not make spring rolls at home, lots of them, hot and delicious, so that all of us could pig out (instead of just me :).  

These shatteringly crispy crunchy on the outside, juicy and deliciously savory meat and veg stuffed on the inside Chinese Spring Rolls 春捲 are super easy to make at home.  That way everyone can crunch their way through as many yummilicious spring rolls as their heart desires!

Chinese Steamed Chicken Buns 雞包仔

Recently my 老公 decided that he doesn't want to eat 'red meat'.  Red meat like beef and pork.  Makes dinner kinda crazy sometimes cuz we have to cook his stuff and the regular stuff for us (he insists a growing girl, meaning my little girl not me LOL, needs her red meat.)  Teensie tiny eyeroll...I mean proteins are proteins, wherever they're from, amirite?  But I digress. 

Actually this limitation has challenged us in directions we probably wouldn't usually consider.  Like these Chinese Steamed Chicken Buns.  I myself grew up eating my grandma's Steamed Pork and Veggie Buns.  For quite a period of time it was my breakfast and after school meal.  This skinny little growing Chinese girl could gobble up 3 to 4 buns in one go!

I wanted my family to enjoy the same kind of bun fun so I decided to make these chicken buns so that everyone in our little family could enjoy them.  In the process I discovered that these Chinese Steamed Chicken Buns 雞包仔, with its juicily delicious, tenderly aromatic infused chicken pieces wrapped inside a soft pillowy bread is actually super yummilicious as well as quite easy to make!

Osmanthus Chinese New Year Rice Cake 桂花年糕

An important part of the Chinese New Year is the making and eating of the Chinese New Year Rice Cake 年糕.  These perfectly round cakes symbolize the yearly reaffirmation of the whole, the union, the endless unbroken circle of family and life.  So you see how important a role these cakes take on?  

This year I decided to add a twist on the usual sweet rice cake by adding flower blossoms to the mix.  This Osmanthus Chinese New Year Rice Cake 桂花年糕 is made with osmanthus infused sugar syrup, resulting in a cake that has all the wonderful chewy rice-i-ness of the traditional rice cake but permeated with the lightly floral, sweet and mouthwatering fragrance of the osmanthus flower.  

As I have mentioned before, osmanthus is one of my 媽媽's favorite flowers, so this one's for you dearest 媽媽!

Black Sesame Walnut Mooncakes 黑芝麻核桃月餅

Yay, it's almost time for Mid Autumn Festival 中秋節...my favorite Chinese festival!  I love the fact that it's a night festival (I'm an owl for sure) and the extravagance of Chinese lanterns floating like glowing gems thru the velvet night, illuminating the happy faces of children up well past their bedtime.  And...glory!...the sight of the Moon Goddess Chang'e 嫦娥 floating high in the sky in all her silvery glory is not to be missed.  

And besides all that I love making and baking and eating mooncakes, those wonderful moon shaped cakes stuffed with all manner of decadently delicious fillings.  (See the list of our other yummilicious mooncake recipes at the end of this post!)  And out of all those decadent mooncakes I think these particular mooncakes might be my favs.  

Maybe cuz I dig the fragrant nuttiness of roasted black sesame.  Maybe cuz I lust after walnuts. I don't know...maybe I'm just nutty.  

I just know that I love eating these deliciously satisfying Black Sesame Walnut Mooncakes 黑芝麻核桃月餅, with its tender golden crust wrapped around an oh so fragrant sesame filling dotted through with delicious bitter sweet bits of walnut.  I can eat a whole plate of these in one go!  That's right...the whole plate means all five of the mooncakes on the plate you're looking at...gulp, gulp...gone already!  Hee hee...

Mung Bean Paste 綠豆沙餡

This is one of the classic Chinese pastry cake fillings, the Green Mung Bean Paste 綠豆沙餡, a light, creamy, beany and nutty sweet golden filling that is one of my favorite fillings.  We used this paste to make our yummilicious Green Mung Bean Cakes 綠豆糕 for Duanwu Dragon Boat Festival  端午節 this year but actually it is more often used in as a tender filling for various Chinese cakes, pastries, cookies and even mooncakes.

Sweet Cow Ear Cookies 甜牛耳朵餅

As promised, here is my sweet version of that festive Chinese New Year treat, the Cow Ear Cookie. In our last post we discussed the recipe for the traditional Chinese Cow Ear Cookie 牛耳朵餅,  a savory cookie flavored with the exotic flavors of the Chinese red fermented bean curd.  I found the flavors of the red fermented bean curd in a cookie so intriguing that I decided to try to make a sweet version of the same.  

Here is the result, my version of a Sweet Cow Ear Cookie 甜牛耳朵餅, a buttery sweet pinwheel cookie swirled through with the distinct umami flavors of the Chinese red fermented bean curd.  Psst...tell you a secret...I think we like these sweet cookies even better than the traditional savory ones!!

Cow Ear Cookies 牛耳朵餅

This traditional Chinese New Year cookie that has a really good name.  An animal part name...a name that only the Chinese could think of, loving as they so do to name things in a strange ways.  Personally I could think of many other names for a cookie like this that would be as appropriate and definitely more pleasing to the ear (and the stomach!)  

Nevertheless the aptly named but strange sounding Cow Ear Cookie 牛耳朵 is a pleasingly pinwheel patterned deliciously savory cookie flavored and colored with the interesting and rather exotic flavor of the Chinese red fermented bean curd 紅腐乳.

Chinese Date Paste 棗泥餡

Traditional Chinese sweets typically use a couple of kinds of fillings like red bean paste (see my Grandma's red bean paste recipe), lotus seed paste, egg custard (see our custard recipe inside our Snow Skin Custard Mooncake recipe post), etc.  

Another traditional Chinese dessert filling paste is this yummilicious concoction made from Chinese dates also known as jujubes 棗, a sweet pulpy fruit that is often used to sweeten Chinese desserts.  The Chinese Date Paste 棗泥餡 is pretty simple to make and the end result is a rich, fruity, sweetly smooth and thick paste that can be used for stuffing pastries like Chinese Rice Flour Cookies 紅棗泥炒米餅 or for making candy like Chinese Date Walnut Candy 棗泥核桃糕.

I'm sure that every Chinese kid has eaten these delicious chewy traditional Chinese Date Walnut Candies 棗泥核桃糕 at sometime or the other.  Made of Chinese dates and walnuts, its soft sweet fruity chewiness packed full of walnuts, it's a delicious treat anytime. For the Chinese New Year, it is the perfect traditional candy to fill your Chinese Tray of Togetherness 攢盒 with!  

We decided to go for broke this year and make these Chinese Date Walnut Candies at home and the resulting fresh yummiliciousness was even better than we expected.  Fresh homemade candies really rock the flavor!

Rabbit Fish Congee 泥鯭粥

Here's a little something for comfort, guaranteed to hit the right spot, as the autumn weather turns chill, cool northern winds blowing tree leaves adrift.  This is a classic Cantonese type of congee, or rice porridge if you like, that infuses the wonderfully creamy soothing heat of rice porridge with the sweet tender meat of the rabbit fish.  

You can, of course, use other fish but this particular combination is a classic dish that you can, if you're lucky, still find in some of the grand ol' Cantonese restaurants that carry on in traditional fashion.  Or, shucks, if you can't find it, try making it at home, trust me it's worth the effort!  

Rabbit Fish Congee 泥鯭粥 is an easy enough dish to make at home, it just needs a bit of time to cook down the rice and soon you'll be slurping on a perfect dish of creamy fish congee, warming yourself from the tip top of your head right down to the bottom of your toes!

Chinese Rice Flour Cookies with Date Filling 紅棗泥炒米餅

The best thing about the celebration of traditional Chinese festivals are the traditional style eats, amirite?  And as it's Mid Autumn Festival time (oh the moon tonite!) we thought we'd make some traditional style cookies for those who are not so much into eating mooncakes.  

These Chinese Rice Flour Cookies with Date Filling 紅棗泥炒米餅 are wonderfully light and satisfying traditional cookies, slightly crispy yet crumbly with a lusciously sweet date filling besides packing a visual wallop with their graceful molded shapes.  Plus they are easy to make!

Shanghai Pork Chop Noodles 上海豬排麵

Folks nowadays are so into instant noodles...I see families at the supermarket fill up their shopping carts with packets after packets of instant noodles!  And don't get me wrong, we love instant noodles as much as the next guy.  (My favorite flavor is the seafood curry!)  

But let's go back in time a bit, and consider, what came before instant noodles?  Well, I imagine it would be some like this...a quick and yummilicious bowl of soft slurpable noodles that fills you up with tasty crisp protein as well as hot and nourishing soup.  

This old classic noodle dish, the traditional Shanghai Pork Chop Noodles 上海豬排麵, is not only easy to make but yummy and satisfying to the tum as well!

Eight Treasures Rice Pudding 八寶飯

Almost time to welcome in the Chinese New Year 中國新年!  In preparation for the feasting this New Year I decided to make a treat that my grandma 奶奶 made for us when I was a little girl, the delectable Eight Treasures Rice Pudding, or 八寶飯, a traditional Chinese dessert that is a steamed glutinous rice pudding with a red bean paste center, beautifully decorated on top with all kinds of colorful dried fruits and nuts.

I still remember the first time my 奶奶 made it and how big and round my eyes grew as she carried it, gleaming with colors and fragrant with wonderful smells, to the dinner table.  I had never in my short life seen such a fancy cake before.  It was magical!

Pineapple Buns 菠蘿包

This recipe is for our reader Raymond who asked for a recipe for Pineapple Buns with the real traditional crackle cookie tops.

I hope that this recipe is the one he was looking for, anyways this is the one that we know as the traditional Pineapple Bun, or 菠蘿包, a soft fluffy bun underneath and a crunchy crumbly crackled sweet cookie like crust on top, invented in Hong Kong in the sixties and still a standard at all Hong Kong traditional bakeries.

A taste sensation, the cookie crust crumbles delightfully in your mouth when you bite into the soft warm tender bun.  Pineapple Bun, named for the texture of the crackle crust that resembles the real pineapple, is a real special afternoon or breakfast treat and an absolutely unique Hong Kong style bake!
