Chinese Steamed Egg with Mushroom 香菇蒸蛋
There's absolutely nothing better than a silky smooth Chinese egg custard as we've shown our dear readers how to achieve successfully in our post on Chinese steamed eggs 蒸蛋 (click the link!). Today we'te going to talk about a twist on the classic steamed egg that had my hubby and little girl asking for seconds and thirds and finally demanding why I hadn't made more!
The twist? We infuse the intense and fragrant flavors of dried shitake mushroom into our silky smooth egg custard. Wow oh whoppity wow, why haven't I made this before? Chinese Steamed Egg with Mushroom 香菇蒸蛋 is so yummilicious: delicate slippery bites of tender egg custard with delectably flavorful chewy bites of mushroomy mushroom. YUM! Chinese Custard Buns 奶黃包

Snow Skin Custard Mooncake 奶皇冰皮月餅
This lovely hand pressed cake is a very popular recent incarnation of the traditional Chinese mooncake, the Custard Mooncake 奶皇月餅, which is actually a repurposing of a traditional Cantonese dim sum favorite, the Custard Bun 奶皇包, a sweet bread bun filled with luscious soft and sweet custard filling.
An enterprising chef at the fabulous Peninsula Hotel decided to tuck the creamy custard filling into a traditional mooncake and created the first of these 30 some years ago and since then they have become more and more popular. (And expensive!)
We wanted to make some custard mooncakes for Mid-Autumn Festival 中秋節 but decided to put a twist on it and wrap the creamily delicious custard inside a delicately soft rice flavored mochi like wrapping to make Snow Skin Custard Mooncakes, or 奶皇冰皮月餅. OMGosh...yummilicious and light as a snowflake!

Egg Tarts 蛋撻
Greetings for the New Year and hope that you all have had a great holiday season! I know that we've been really, really busy and have only now had a chance to breath a bit.
So, in thinking of what to write about as the first post of this grand new year, I had the inspiration to bring in the year with a bit of sunshine and to me there is not a thing in the world that is as sunshiny and cheerful as the absolutely fabulously famous and wonderfully traditional Chinese Egg Tart, or 蛋撻!
It's something that every Chinese kid grew up with, it's sorta programmed into our DNA or something. Egg tarts are the first 'desserts' I remember eating, my grubby little hand eagerly lifting up a tart from its big pink box, falling in finger lickin love from the first moment with that tender, sweet eggy custard and the cookie like crust. Ohh...just taking one luscious bite of an egg tart takes me right back to warm and fuzzy times...
