Mala Spicy Chilled King Oyster Mushroom Salad 麻辣涼拌杏鮑菇


Hey hobbits out there, doncha just love, love, love mushrooms?  Then this is the dish for you!  Meaty mushrooms marinated in spicy mala sauce and a splash of numbing sichuan pepper oil, sprinkled with aromatics and then chilled to perfection.  This Mala Spicy Chilled King Oyster Mushroom Salad 麻辣涼拌杏鮑菇 is super easy to make and absolutely shroomy-licious!

Mashed Tofu with Century Egg 涼拌皮蛋豆腐

Alright, I'll admit right off the bat that this ain't the most good looking dish.  The first time I beheld it at our neighborhood Taiwanese restaurant I was like "whaat the heck!"  But man, oh, man once we started eating this Mashed Tofu and Century Egg 涼拌皮蛋豆腐, it was baboom!  Flavor texture explosion!  Most favorite tofu dish ever, have to order it every time and everyone takes turns scraping the bottom of the glass serving jar.

This is a riff, if you will, on the traditional Tofu and Century Eggs 皮蛋豆腐 where the tofu and eggs are served arranged prettily but separately on a dish.  Which is how I've always eaten it and it sure is yummy.  But mash up this dish, chill it and somehow it turns the flavor up by a WOW factor as well as adding a lovely creaminess.  Once you get a taste you just can't stop, it's really that good!

Spicy Minced Watercress Salad 爆淹西洋菜

 A most interesting fact: the humble watercress is one of the oldest leaf vegetable consumed by humankind!  I love food facts like that, they really do tickle the imagination, allowing the mind to travel far into the past to marvel at the simple things that connect us across the dunes of time.

We mostly use watercress to make soup as it imparts a lovely flavor.  Stir frying with a touch of garlic is also a nice way to have watercress.  Recently I read about another way to prepare watercress that I have been most eager to try.  This easy to prepare refreshing Spicy Minced Watercress Salad  爆淹西洋菜 is deliciously crisp and slightly peppery with a hint of sesame.

Sea Snails Simmered in Sake Soy Sauce 清酒鼓油煮花螺

Here's an super easy to make, cool and refreshing sea fresh dish for shellfish lovers to dream about for the hot months ahead!  We first had these lovelies in a neighborhood restaurant and were so enchanted by these tasty savory sweet tidbits that we decided to try to make it ourselves.  

Lucky for us that we live in the harbor city of Hong Kong where the fabulous local wet markets supply the intrepid shopper with endless varieties of super fresh seafoods.  And thus we were able to source out these shelled treats and make our version of Sea Snails Simmered in Sake and Soy Sauce 清酒鼓油煮花螺, the perfect summer seafood treat to prepare for a dinner or, even better, to have with as a snack with a chilled glass of wine.  Ah...those lazy summer days!

Vietnamese Lemongrass Beef Noodle Salad Bun Bo Xao

When it gets hot and muggy (yup, that's right, it feels like summer already here in Hong Kong), there's nothing like a chilled bowl of noodles, amiright? But at the same time why not go for a refreshing green salad? Heck, why not have both at the same time?! 

One of the best kinda noodles /salads for when you want to cool down and you're in the mood for lots and lots of fabulous flavor is a chilled bowl of Vietnamese Beef Vermicelli Noodles or Bun Bo Xao : tender, chewy noodles cradled in a bed of baby greens, dressed in a tangy sweet spicy sauce and topped with more luscious greens (including mint and basil!), strips of oh so flavorful grilled lemongrass marinated beef and, to top it all off, sprinkled generously with crushed peanuts and crispy fried shallots.

Bang Bang Chicken Salad 棒棒雞絲

Bang! Bang, bang! Want to get back at all those annoying things that happen all in a day's work that you can't do anything about like...being stuck in traffic because you stupidly decided to get a taxi instead of using public transport or...waiting in line forever as the person in front "chats' with the cashier or...your boss giving you a hard time for something that's his fault or...hey, I could go on forever.  

Well how about taking out your frustrations on a tender juicy piece of chicken breast, before ripping it to tiny little pieces?  But then you feel a wee bit mean and so you have to make amends by dressing that shredded chicken with a drizzle of spicy numbing sesame soy dressing, then nestling it tenderly on a cool crunchy bed of cucumber strips and translucent mung bean noodles?  Yummmm...amiright?  And don't you feel better already?  I know I do.  

Make this cool and yummilicious Bang Bang Chicken 棒棒雞絲 for your dinner tonight and see if you don't get a right 'bang' out of it!

Chilled Bigeye Fish - Chiu Chow Style 潮州凍大眼雞

The thing about spring in Hong Kong is that it lasts only a few cool windswept weeks and then it's gone forever.  BAM! and just like that we're right in the midst of hot summer heat.  Yuck!   If there is one thing that I could do without it's those endless summery months!  

And yet one must soldier on nevertheless and thus we find our thoughts turned longingly towards those delicious cold dishes in the Chinese repertoire. We've posted about several Northern Chinese style cold dishes like the crunchilicious Chinese Cold Cucumber Salad and the cold Chinese Spiced Beef Shin.

Today I want to share our latest obsession, a Southern style Chinese cold dish, the very easy to make and really, really amazingly fresh and sweet Chilled Bigeye Fish - Chiu Chow Style, or 潮州凍大眼雞.  This cold fish dish is so tasty and it keeps so well in the fridge that we're making batches of it so we can have it all the time! It's that good!

Chinese Chilled Crab with Vinegar Dip 凍花蟹

In the long hot months of the summer, there are few things more pleasurable to serve for dinner than a cold dish.  Actually I love Chinese cold dishes.  I have always found the taste of food chilled overnight to be especially tasty.  

Even when I was a little girl I would sneak midnight snacks from leftovers in the fridge: a cold soy sauce chicken wing, an icy wine flavored shrimp, a cool knob of fatty pork.  YUM!  Literally finger licking good!  My grandma used to always yell at me for this habit of eating straight out of the fridge.  'No, no, that's not the Chinese way!' she would say, exasperated and confused by my strange behavior.  

I guess what she meant was that Chinese food was meant to be eaten hot (and at a table!).  Which Chinese food is most of the time and properly so too.  Chinese cuisine is based on things like 'breath of the wok' after all.  But luckily there are many Chinese foods which are meant to be eaten cold, like this delicious and very easy to make Chinese Chilled Crab with Vinegar Dip, or 凍花蟹.  It's the perfect seafood dish to serve on a hot summer's night!
