Chinese Winter Sun Dried Salted Fish 臘鯪魚

Dear readers...it's been a hard year, hasn't it?  Well there's a new year ahead of us and here's hoping (fingers very seriously crossed) that the coming year is better,  much better.  Aristotle Onassis said "It is during our darkest moments that we must focus to see the light."  Well said, sir.

As with everyone else all around the world, we've been staying mostly inside our homes for a while now.  I've noticed that limitations, at first seemingly restrictive, can in the end actually push you to exercise your mind in interesting and less used pathways.  Thus we present our slash of light in the darkness, an experiment born out of a bit of boredom (umm...still at home...) and a bit of necessity (umm...still must stay at home...)  

Out of this time of 'limitations' comes my 老公's very successful attempt at Chinese Winter Sun Dried Salted Fish 臘鯪魚: fresh fish, lightly salted, marinated and then hung dried in the winter sun, resulting in a preserved fish that tastes fresh but intensified, slightly salty yet still sea sweet with a chewy texture similar to very soft jerky.  

This whole procedure, done in our tiny kitchen and hung to dry in our common stairwell is a simple yet strong reaffirmation back to our roots as humans with just the sun to preserve our precious food.

Steamed Sun Dried Dace 蒸臘鯪魚

The fact is that Hong Kong is an island, though sometimes this is easily forgotten living inside of Hong Kong's massive, soaring concrete jungle of a city.  And because of this island history there is a strong tradition of fishery, seafood, and also, to many a food lover's delight, a diverse and rich local history of many ways of preserving, preparing and eating that seafood.  

We love the super fresh and happening seafood we get at the wet market in Hong Kong and have posted many recipes of our favorite fresh and preserved seafood dishes.  

Today I want to introduce you to an amazing southern Chinese speciality, the Sun Dried Dace, or 臘鯪魚.  This sun preserved fish, also know as Mud Carp, is nowadays rarely to be seen, but we found some the other day at the market at one of our favorite stalls and snapped it up quick as a flash!

Steamed Salted Sun Dried Fish 蒸南倉鹽鮮魚

For a long time I have fantasized about making my own dried salted fishes.  (Very sexy, I know!)  My 媽媽 keeps tantalizing me with stories about when my 爸爸 used to make his own dried fishes (which for some reason I can't remember at all).  She always describes my dad's homemade dried salted fishes as incredibly tasty!  All one would need is a simple mesh structure of some sort, with a door that you could latch securely.  Then, bam!: you could have an endless supply of tasty (and cheap!) gourmet adventures in dried foods.  

Alas for the one simple, sad fact:  we don't have a garden!  Not even a balcony, not in cramped Hong Kong where real estate is at such a premium.  Just a shoebox sized apartment bursting at the seams already with all of our stuff and a teensy tiny, itty bitty kitchen.  So we were very excited recently when my 老公's mother discovered this Salted Sun Dried Fish at the Aberdeen Fish Market.
