Golden Prawns with Salted Egg Yolk 黃金蝦

There are some foods that just have to be eaten with your fingers.  And then those fingers have got to be licked...slowly and thoroughly...  

This decadent seafood dish is definitely one of those dishes, it's so delicious that one can't stop salivating and licking fingers in anticipation.  Yum, yum, yum, yummy, yummy yum, yummy yummy, yummilicious!  This special little dish is just the thing for a proper Chinese New Year's feast, its golden yellow gorgeousness will bring you and yours golden luck all the year long.  

We present the very unique Golden Prawns with Salted Egg Yolk, or 黃金蝦, a stir fry of prawns coated with a lusciously clinging sauce made from the yolk of the Chinese salted duck egg, which, as my little girl knows, is the very best part!

First then, the salted duck egg, or 鹹鴨蛋.  We used some of our homemade salted duck egg, the yolks luscious, rich, oily, so flavorful, utterly yummilicious.  

Just clean off the salted eggs, break open and separate the yolk (which will be solidified already from the salting process) from the the egg whites and give the yolks a quick steam.  (Or buy them precooked and just separate white from yolk.)  

For a truly lovely decadent Golden Prawns with Salted Egg Yolk you can use 1 egg yolk per prawn.

Ahh...sweet bounty of the seven seas.  I love seafood!  We used frozen tiger prawns, a really fabulous way to get sea sweet freshness at a good price.  Once the prawns are defrosted rinse them, cut off the legs and antennae, and then snip open along the back curve of the shell and remove the black vein.

The prawns are coated in flour with the excess shaken off and then deep fried until the skin is crispy.  The flour is needed in order to create a surface on which the sumptuous egg yolk sauce can cling ever so sexily to.  

You can also use cornstarch for the coating which, I've heard,  is even better at holding onto the sauce.

The salted duck egg yolks are mashed then stir fried with butter and spices and wine until fragrant and a luscious clinging sauce is formed.

The deep fried and crispy skinned prawns are tossed in the sauce and stir fried until the sauce is dry enough to cling to the deep fried prawn skin.  Ohhh!!!   REALLY decadent and gosh darnnit finger lickin good!  

Just try not licking your fingers after one of these luscious prawns, I dare you...

Directions:

Break open salted duck eggs and remove the yolk, which will be solid enough  to pluck out of the egg whites.  Place onto plate and steam for 10 mins.  Let cool then mash the egg yolks.

Wash prawns, cut off feelers and legs, use scissors to cut 1/4" deep along the curve of the back of prawn.  Remove black vein that is exposed.  

Pour flour into a shallow plate, dredge prawn in flour and shake to remove excess flour. Using a small pot, deep fry prawns in at least 2" of oil, a few at a time so as not to overcrowd the pot, until the prawns are crispy and golden.  Remove and place on kitchen paper to drain.  

Heat wok over low heat.  Add in butter, mashed egg yolks, salt, sugar and rice wine.  Stir constantly until a paste forms, being careful to not let it burn.  Drop in deep fried prawns and gently stir until the sauce clings to your prawns.  Eat hot and delicious, enjoy!

  1. Yum! I've been looking for a recipe like this one, after eating crab stir fried in salted egg yolks at a restaurant! Do you know what size the prawns are (or how much those 8 prawns you used weighed)? Thanks!
